Eggnog Pancakes Recipe

Growing up we didn’t cook tons of breakfast foods on “regular” days – mostly just a bowl of cereal in the morning – but we usually had a hot breakfast foods for holidays together. Breakfast (or brunch for those of us that sleep in), on Christmas morning was certainly a highlight – just behind the presents under the tree! Pancakes – in some form or fashion – are always a fan favorite, but would sometimes mix it up with french toast or waffles. Always a mound of bacon though! and sometime for good measure we would cut up the bacon and mix it into the waffle batter (your’e welcome!).

But these eggnog pancakes are delicious, bursting with rich flavors of the holidays – eggnog, cinnamon, nutmeg! As good as they are on Christmas morning, I suggest making them at least once or twice before – you know, for practice

A little pro-tip on making pancakes fluffier, add a little extra baking powder!

Ingredients:

2 CUPS ALL PURPOSE FLOUR
4 TSP BAKING POWDER
1/2 TSP SALT
1/2 TSP NUTMEG
DASH OF CINNAMON
3 TBSP SUGAR
2 EGGS – ROOM TEMP
1 TBSP BUTTER – MELTED
1 1/2 CUP EGG NOG Find It
1/4 CUP WHOLE MILK Find It

Directions

IN A LARGE BOWL, COMBINE FLOUR, BAKING POWDER, SUGAR,
SALT, NUTMEG, AND CINNAMON.
IN A SEPERATE BOWL, BEAT EGGS, BUTTER, MILK, AND EGG
NOG. THEN STIR EGG NOG MIXTURE INTO DRY INGREDIENTS
UNTIL COMBINED.
HEAT GRIDDLE OVER MEDIUM HEAT AND GREASE LIGHTLY WITH
BUTTER. POUR 1/4 CUPS OF BATTER ONTO GRIDDLE. TURNOVER
WHEN BUBBLES APPEAR ON TOP. COOK UNTIL GOLDEN BROWN.
